Post Doctoral Researcher in Food Structure Engineering of Biobased Materials

We are seeking a highly motivated and interdisciplinary Postdoctoral Researcher to join an exciting two-year research project focused on the post-processing of mycelium-based materials. This project is a collaboration between ETH Zürich and Planetary AG, a leader in sustainable food innovation. The research will investigate the physical and chemical transformation of mycelium through various post-processing techniques, with a strong emphasis on characterizing soft matter.

Job description

  • Design and conduct experiments on the post-processing of mycelium materials.
  • Apply and develop soft matter characterization techniques, including rheology, microscopy, and spectroscopy.
  • Analyze structure–property and structure-function relationships in mycelium-based systems.
  • Scale-up processes at the industrial partner
  • Collaborate closely with interdisciplinary teams at ETH Zürich and Planetary AG.
  • Communicate findings through scientific publications, presentations, and stakeholder meetings.
  • Contribute to the supervision of graduate students and support lab management.

Profile

  • PhD in Materials Science, Food Science, Physics, Chemical Engineering, or a related field.
  • Strong background in soft matter physics, rheology, or biomaterials.
  • Experience with experimental design and data analysis.
  • Excellent communication skills in English (written and spoken).
  • Demonstrated ability to work independently and collaboratively in interdisciplinary teams.
  • Experience with biological materials, especially fungal or mycelium-based systems..
  • Interest in translational research and industry collaboration.
